Summer is less than a week away and will bring an opportunity to nourish yourself in different ways. A good fruit salad is one way to feed your body with essential nutrients while providing hydration to your muscles, tissues and joints. The juicy kiwi and peach chunks send this fruit salad over the top! It’s packed full of antioxidants, Vitamin C, Vitamin E, fiber and potassium and offers anti-inflammatory and anti-cancer properties, supports collagen production, the eyes and the heart.

I like to make a fruit salad, store in the refrigerator and enjoy all week. Option to add it to yogurt, granola or cottage cheese or add nuts, seeds or other fruits to it. Also, it’s a great dish to take to social events or potlucks.

Recipe

Ingredients: 12 oz strawberries, 12 oz blueberries, 6 oz raspberries, 2 kiwis, 1 peach

Method:

1. Wash all fruit.

2. Remove tops of strawberries and skins of kiwis.

3. Cut strawberries into quarters or halves depending on how large you like your strawberry pieces.

4. Slice kiwis then cut slices in half.

5. Cut peach into bite size pieces and remove pit.

6. Combine all ingredients into a bowl and stir evenly.

7. Serve and enjoy!
