Buckwheat Pancakes
2 cups buckwheat flour
2 cups coconut milk or alternative (rice milk or other milk)
2 eggs
1 tsp-1tbsp vanilla
Cacao 2 tbsp (optional)
Honey to taste
Optional: add berries, walnuts, chocolate chips
Instructions
Mix ingredients together and cook on stove. You can make a lot and enjoy all week. Refrigerate the leftovers and use pure maple syrup, honey, peanut butter, fruit, or agave nectar for topping.
Kale Smoothie
1/2 cup coconut milk
2 cups stemmed and chopped kale or spinach
1 1/2 cups chopped pineapple (about 1/4 medium pineapple)
1 ripe banana, chopped
Instructions
Combine ingredients and puree until smooth, adding more water to reach the desired consistency.
